The Le Palaie cellar represents the heart of the winemaking vocation of the estate.
Inaugurated in 2012 and equipped with the most modern technologies for winemaking, it evokes all the charm of an ancient process that has been perpetuated for centuries in the Alta Val d'Era, between the provinces of Livorno and Pisa: the perfect place to taste fine wines.

Maximum innovation while respecting tradition

The production process of the Le Palaie winery is based on the Persec SAEn5000 system.
The truncated cone-shaped steel winemaking tanks are equipped with a fuller on a rail; the temperature of the tanks, the ventilation and air conditioning of the winemaking rooms are constantly monitored, as is the aging process in the underground barrel cellar. The destemming, pressing and vinification phases are managed with the most modern procedures.

The barrel cellar, where the wine rests for months

The barrique cellar houses large tonneaux and barrels, caratelli (barrels made of fruit tree wood built by a local axeur, to store our passito wine) and containers made of cocciopesto, an ancient material inherited from Roman times.
It is in this magical environment that the wine matures to perfection.

Visiting the cellars: an unrepeatable emotion

Guided tours of the wine cellar are organized in Le Palaie. From the upper floor, used for reception and tasting, you descend into the technical rooms via a spectacular staircase with glass walls. In the barrel cellar, next to the barrels there are sculptures arranged inside niches, which transform the environment into a true art gallery.

Tasting wine: a correspondence of loving senses

Wine tasting in the cellar is a magical moment, the perfect combination of sight, taste and smell.
It is not a simple tasting, but an overall evaluation resulting from different sensorial perceptions: visual analysis as a first approach, olfactory analysis for a further element of discovery, and finally the infinite pleasure of tasting an excellent wine.
